Recipe of the Month - May 2012 -

Vegetable Lasagne with Zucchini and Green Beans

Source: Modified from Jamie’s 30 Minute Meals

Preparation time: 10 minutes
Cooking time: 30 minute

Nutritional Analysis (per serve):
Serves: 8

Ingredients:
6 Spring Onions

6 Anchovies in Oil

6 Cloves of Garlic

1 large Zucchini

500g of Frozen Peas

1.5 cups of chopped up Green Beans

300ml of Vegetable Stock

500g of Cottage Cheese

375g of Fresh Lasagne Sheets

0.5cup of Grated Tasty Cheese

Method:

1)     Finely chop the Onions, Zucchini, Green Beans and Garlic.  Have them all ready so that it makes the cooking process easier

2)     Using the oil from the anchovies to fry the anchovies, onions and garlic until slightly caramelised

3)     Added the zucchini and cook until is has softened

4)     Add the frozen peas and beans and continue to cook until slightly softened

5)     Roughly mash and squash the ingredients and cover the vegetables with the stock and bring back to the boil

6)     Mixed through 250g of the cottage cheese, which should make it creamy and loose.  Turn of the mixture

7)     In a roasting tray, spread a layer of the vegetable mixture and cover with a layer of lasagne sheets.  You will be able to do 2 or 3 layers

8)     On the top layer, spread the remaining cottage cheese and sprinkle the grated tasty cheese.

9)     On the stove, place the roasting tray and heat on a medium heat until the tray is bubbling.  It should be cooked through, but test it with a knife

10)  Take the tray off the stove and place it under the grill for 8 minutes until golden on top.

11)  Take it out of the grill, cut into 8 portions and serve

Member of the month for March 2012

Connor Stewart

Why did you originally attend MD Health?

I had trouble running and playing sports.  My doctor diagnosed me with joint hypermobility which means I am very flexible but it makes it hard for me to play sport.  I had low muscle strength and was very uncoordinated. I joined MD health to get stronger and build some muscle.

Why do you keep coming back to MD Health?

I keep coming back because MD health is making a difference to my life.  I am getting stronger, and know I can get even better. I am also having lots of fun, I enjoy the exercises and the trainers are great.

What do you enjoy most at MD Health?

The exercises and feeling stronger.

What’s the biggest surprise benefit you have found?

I am more active (in that I want to go outside and play) and now even enjoy sport.  something I always avoided.

Any other comments?

My doctor said that he sees many kids come through the children’s hospital with hypomobility and they find it hard to help them.  He was stunned at the changes in me after 3 months and impressed with MD Health’s program.

Kind regards,
